Schultz earned his B.A., cum laude, from Cornell University in 1992, majoring in history and international relations, followed by an M.A. in History from the University of Texas in 1993. He graduated from Cornell Law School cum laude in 1996, where he served as an editor of the Cornell Law Review.

After graduating from law school, Schultz served as a law clerk to Judge Edward C. Prado of the U.S. District Court for the Western District of Texas, where he gained hands-on experience with complex federal litigation. He then joined international law firm Akin Gump Strauss Hauer & Feld LLP, rising from associate to counsel and working across both the litigation and hedge fund practice groups. In 2008, Schultz returned to San Antonio to launch his own practice, leveraging his big-firm background to focus on sophisticated business, financial, and commercial disputes.
